Orzo Casserole

savory side dish with orzo pasta, mushrooms and onion

Ingredients:
2 tablespoons margarine or butter
1 clove garlic, finely chopped
1 1/2 cups uncooked orzo pasta
1 envelope Onion or Onion-Mushroom soup mix
3 1/4 cups water
6 ounces shiitake or white mushrooms, sliced
1/4 cup chopped fresh parsley
Directions:
In 3-quart heavy saucepan, melt margarine over medium heat and cook garlic with orzo, stirring constantly, 2 1/2 minutes or until golden. Stir in onion soup mix blended with water. Bring to a boil over high heat. Reduce heat to low and simmer, covered, 10 minutes. Add mushrooms; do not stir. Simmer, covered, 10 minutes. Stir in parsley. Turn into serving bowl. (Liquid will not be totally absorbed.) Let stand 10 minutes or until liquid is absorbed.
Cook's Notes:
This reciped makes about 10 (1/2 cup) servings and is a great side dish.
